Book excerpt: Genetically-transformed hairy roots produce a wide range of valuable compounds in vitro at levels much greater than usually found in dedifferentiated tissue. Exploitation of hairy roots for large-scale production of plant chemicals depends on our understanding of their culture requirements and production characteristics, and our ability to develop appropriate bioreactors which provide adequate mixing, mass transfer and shear protection. This paper reviews recent findings about the stability, growth patterns, alkaloid synthesis and oxygen mass-transfer properties of dense hairy-root cultures.
