Book excerpt: The present book is a comprehensive theoretical investigation of the direct contact evaporation process of drops, which is growing because of change of phase, in an immiscible liquid. The attempt here is to gain fundamental understanding of the transport processes (hydrodynamic and heat transfer) that take place during the direct contact evaporation process. A theoretical model based on continuity, motion, momentum and energy equations in addition to the energy balance equation is developed, by using cellular model. This model aims to obtain characteristics of the direct contact evaporation of a single droplet bounded by a spherical cell of continuous liquid. Furthermore, these characteristics are used in order to develop a theoretical model aims to obtain the characteristics of the direct contact evaporation of multidroplets.
